Produce Co-op

So many of you may or may not know that I purchse the majority of my fruits and veggies from a local produce co-op. I place my "order" online, and pick up every other tuesday. The goodies are fresh, most are local and WAY better than anything I have ever found at the grocery store. The most popular item most people purchase is the "produce basket". This is a variety of fruits and veggies that changes with every order. We usually find out the weekend before pick up what exactly we are getting in the basket. There are "extras" available to order. These are usually staples that people use a lot of (tomates, celery, etc...), but also include some special items like the "fruit salad pack" and whole grain pizza crusts. I have been ordering for almost a year, and I love it! I took some time off from ordering, as we were out of town a lot we weren't going to be home to eat all of our goodies. Below is a pictre of just what I got in my "basket". I got cauliflower, roma tomates, onions, bananas, grapes, limes, tangerines, a lunch box fruit pack (apples and oranges of different varities), green onion, brussle sprouts, cilantro, red potatoes, napa cabbage, avacadoes. I ordered an 8-pack of kiwi, whole grain pizza crusts, and vine ripe tomatoes as extras! The basket itself (with no extras) cost $23. This is MORE than enough to keep up full for 2 weeks. The best part of this group is that is has gotten me to try new things and make healthier meals for my family.
When I get home from pickup, the first thing I do is unload all the goodies from my bag and organize them. Almost everything gets prepped, chopped and stored so its easy to use when I need it. Below is a photo of the homemade chunky salsa that I made using ingredients from my basket (roma tomatoes, onion, garlic, cilantro and lime juice).
Here is the inside of my fridge....everything chopped and stored for easy to get to recipes and quick cooking!
And here is my lunch: an everything bagel-thin with a wedge of garlic and herb laughing cow cheese, homemade salsa and baked "scoops" tortilla chips and kiwi. Super yummy, filling and GOOD FOR ME!

Project 5 Task 1

What are the benefits of blogging for students?  There are many benefits of blogging for students. Students can use blogging to express what they have learned about a specific topic in the classroom. For example, students have been learning about marine animals in science class. Students have been following the nesting of sea turtles in Hilton Head Island. They have each chosen a nest and have been following it on their website. Every few days, students read the progress of the nest online and then create a blog post on what they read and include images to share with their classmates.  Another benefit to students blogging is for them to be able to express themselves creatively. Students can create a weekly poem blog post where they find a poem they like, copy it to their blog post (citing the author and resource where they found it) and then summarize the poem and write about why they chose it and what they liked most about it.  Click the link below to access the Pr...

12 Days of Pinterest: Day 8

Day 8: 12/17/12 Ok, so I apologize for the break in my "12 days of Pinterest" posts. My parents were in from Ohio the last 5 days and we were busy celebrating Christmas (early) and doing all the St. Louis holiday things there are to do (lights, train displays, Christmas concerts....you know!). Today I am doing a something that when I saw it on Pinterest - I knew I HAD to do it! We have a ton of ornaments. They are currently on our tree (duh) but when they are in storage the other 11 months of the year, they are kept wrapped in tatty tissue paper in shirt boxes that are falling apart. Every year I say "I am going to get one of those "ornament organizers" (the ones you see at Target and Home Depot)....and every year when I go to buy one, I go into sticker shock! How can a piece of plastic that holds 12 ornaments be $20! Of course we have more than a dozen ornaments, so I went on a hunt for something cheaper! Here it is! It cost me $2.50 to make. I used cardboa...
