12 Days of Pinterest: Day 1

Day 1 of my 12 days of Pinterest quest. Today I decided to try something for the kids. They're called "puffins", or pancake muffins. You take regular pancake batter and add what ever mix-in you'd like (chocolate chips, blueberries, strawberries, cinnamon, etc...) and then pour in a mini muffin tin and bake. These looked delicious and super easy to make - a lot easier than standing at the stove over a griddle cooking 3 pancakes at a time. Brady loves both mini pancakes and mini muffins and since the demise of hostess, we have been missing those mini blueberry muffins.

I used basic boxed pancake mix, followed the directions  on the box and added green food coloring (to make them festive puffins) and milk chocolate chips. Bake at 350 for 8-10 minutes.

You could certainly use any fill-ins you like - apples and cinnamon, blueberries and strawberries, etc...I even saw a post where someone put sausage (broke into mini pieces) in the bottom of the muffin tin and then poured the batter over top, baked and then dipped in maple syrup. The possibilities are endless.

Birthday Party at Chuck E Cheese!!

Brady decided he wanted to have his birthday party with his friends at Chuck E Cheese. He invited his best buddies from school and we had a great time. He scored tons of tickets in the ticket blaster, had a Star Wars cake and had a great time playing games with all his friends. Here are some highlights from the awesome party! Highlights from today: Hollywood Studios

Today we spent the day at Hollywood Studios. The kids enjoyed seeing all their favorite characters and catching the fun shows. They loved the Toy Story Mania ride. A weekend in the city...

Kaitlyn has her first Irish dance feis here in downtown Atlanta. We decided to make a weekend of it (she dances today and tomorrow) and spend the night at the hotel where the feis is being held. We started very early this morning with Kaitlyn dancing just before 9am! She did amazing and placed in both her dances (second in jig; 3rd in reel). After she finished dancing we headed to the children's museum of Atlanta. The kids had a blast trying all the cool things to do. Then we grabbed some lunch in centennial park (it's 65 degrees here so we ate outside!!) and then hit the aquarium. The kids are excited to swim at the indoor pool later and then it's more dancing in the morning!
